Chicken has an easy way of tasting, well, flavorless. It’s a bad rap and let me be the first to tell you, you don’t have to eat boring, flavorless chicken any longer. By adding a few layers of oil, seasoning, and bright lemons, you can give any chicken a whole lot of flavor without a whole lot of effort.
This quick and easy baked lemon chicken recipe requires a pyrex and some foil. Entirely made in the oven, you can whip up another dish, take care of the kids, or get some of your sides prepped for your weekly meal prep. It takes about 5 minutes to make and about 45 minutes to bake.

Baked Lemon Pepper Chicken Recipe
Prep Time: 5 minutes
Bake Time: 45 minutes
Serves: 2-10 (depending on how many breasts you make)
- 2 tbsp olive oil
- 2 chicken breasts
- 2 Lemons
- Garlic Salt
- Ground Pepper
- Red Pepper Flakes (if you want a little spice)
- Turn oven to 375 F and line a pyrex dish with foil
- Take fresh or thawed chicken breasts and line in pan
- Drizzle with 2 tbsp olive oil
- Season chicken with herbs, garlic salt, and pepper
- Use 1 lemon to squeeze on the chicken breast and use the other to slice and place on chicken (see image)
- Bake for 45 minutes or until tender
