One of my most favorite things to do when making a spaghetti sauce is to grate some veggies right into the sauce. Another way is to grate vegetables into ground meat dishes and even things like meatballs or chili. In doing so, you’re not only going to get an added boost of vitamins and minerals from the veggies, but it will also contribute positively to the texture and flavor of the meal. Think vegeatbles like zucchini and yellow squash for your spaghetti sauce, carrots and celery into your ground meat, or onion and zucchini into your meatballs.
Opt For Vegetable Dips
You know those classic dips, like ranch and artichoke dips? Those are often made with a base of mayonnaise and/or oils which add up on the fat calories pretty quickly. Instead, next time, opt for a veggie dip like chickpea hummus, beet hummus, or edamame. Pureed vegetables can satisfy that desire for dip without compromising flavor. Bonus? Dip your veggies into veggie dip. Winning!
